Gentleman Dan Warner, brand ambassador for Beefeater Gin, was kind enough to share his recipe for The Land Of The Rising Snapper with me. As I was trying to think of a really home-run Friday Night Cocktail (a new trial feature), something Dan came up with a few years ago came to mind. He made it for myself and several other jet-lagged, hungover journalists at the Beefeater distillery in London, in their industrial-but-bespoke cocktail lounge. Flawless. Put everything right. The drink is visually irresistible, even to a cynic, and the combination of gin, champagne and elderflower cordial is delightful, disarming and quite, quite potent. Fine way to start a weekend.

THE WATERLOO SUNSET
15ml Beefeater
10ml Elderflower Cordial
100ml Champagne
5ml Raspberry Liqueur
Method:
Stir with ice and strain into a Champagne flute
Float Champagne on top
Drop raspberry liqueur into glass so it floats on Beefeater/Elderflower layer
Garnish: Speared raspberry
